My Cousin, Tom, is really bringing it on the grill the last couple of weeks. First the pear crostinis and now pork chops topped with grilled fruit salsa. Full write up with step by step, pic by pic instructions here.

Check your cut. More important than brining is total cook time on your chop. Bone-in can stand more, but boneless has to be fast. Use the bone to your advantage. It helps with marinade and total cook time.
