One thing I will NOT have is New England boiled dinner.
Probably seafood. That's real Irish.

That's what was normally made on St.Patrick's Day when I was in England.
Our last meal together on that day was a pub dinner in Huddersfield. Lamb, potatoes, turnips and gravy.

Yes! That is a very Irish meal. Corned beef was unheard of in Ireland.
Do you still have your duck in the freezer? I do. We should plan on cooking ours at the same time. I need an incentive!

I have some duck breasts and some whole thigh/drumsticks. I plan to confit the legs and sear the breasts. Do you have parts or a whole bird?
Either way, it would be fun to pick a date for duck.
Today I'm making a pot of vegetarian chili.
Not that it belongs in this thread, but my son Ty made oxtails in the smoker last night.
