Gestational diabetes: desserts and other foods, recipes and advice please?

So my nephew's wife is in her 7th month of pregnancy and just found out she has gestational diabetes. She has quite the sweet tooth. Her birthday is coming up and my nephew wants to bake her a birthday cake, specifically a sugar-free carrot cake. She also has to watch carbs so probably refined flour will be a no-no. Thankfully the diabetes will go away after the baby is born.

Any recipes for regular diabetics will apply. If anyone here has experience with diabetes and has recipes or suggestions, it would be greatly appreciated!
