Cranberry Almond Broccoli Salad

This salad is Diabetic friendly, Gluten free, soy free and delicious 😋

In a large mixing bowl combine:
1/3 c mayonnaise (no miracle whip)
1 Tbsp cider vinegar
1 Tbsp honey
3 Tbsp plain Greek yogurt (optional, I use this amount of mayonnaise)
1/4 tsp each salt & black pepper

Salad:
4 cups of raw broccoli florets, rinsed and dried with a towel
1/3 c chopped red onion (rinse in cold water if too strong)
1/3 c chopped red pepper
1/3 c slivered almonds, toasted
1/3 c reduced sugar dried cranberries
4 slices of cooked bacon, chopped or crumbled

After combining dressing ingredients, add the salad ingredients and mix well.
Refrigerate for a minimum of 1 hour for flavors to absorb. Enjoy!

RM, I'm making a keto one this week too!
It has raw broccoli, blueberries, cubed mozzarella and walnuts. I'm using the avocado mayo I bought as a dressing.

I like the sound of both salads, but I would have to blanch the broccoli at least.

Here's the recipe I have.
Subbing the mayo, sweetener and vinegar with the salad dressing.

RM, I'm making a keto one this week too!
It has raw broccoli, blueberries, cubed mozzarella and walnuts. I'm using the avocado mayo I bought as a dressing.
I made it and it's delicious.
However, the blueberries left a slight tinge of colour on the cheese 🤔... It's ok though lol
