Bacon Pancake Pie

i thought my 2000th post better have bacon in it...lol

1/4 cup cooked bacon, crumbled
1 cup flour
2 1/2tsp baking powder
1/4 tsp salt
1 cup shredded cheese
1 cup milk
1/4 cup maple syrup
2 eggs

Mix well: bacon, flour, baking powder, salt, 3/4 cup shredded cheese (reserving 1/4 cup for later), milk, maple syrup and eggs. Pour into greased pie pan. Bake 20 min at 350 degrees or until toothpick inserted in center comes out clean. Add remaining shredded cheese on top, bake for add'l 3 minutes or until cheese is melted.

Allow to cool only slightly, best served warm, cut into pie wedges.

Can also be made in muffin tins, but you will need to adjust the cooking time.

Bam (or anyone), I would like to make this, but without the maple syrup.

Do you think I should add another 1/4 cup of milk, or do you think the syrup is just for flavoring?

Hmmmm, I will have to run it by the chief eater in the house and see if this will be Easter breakfast!

Lee, do you just not want the sweet or dont like maple? You could probably use corn syrup too....

the maple syrup is for flavoring.

my take on a mcdonalds mcgriddle except i put cheese on it..lol

If I didn't add the cheese, would that change the texture too much?

nope... i dont always add the cheese and sometimes i add different ingredients... cooked bob evans sausage,ham. etc etc

you might have to adjust the flour a little bit but not alot

Good, cause I don't like cheese in my breakfast. But I love bacon, pancakes and real maple syrup!

If I can't get real maple syrup, then only Log Cabin will do!

We make some of the best maple syrup right here in Ohio. For baking, I prefer grade B. On pancakes, I like light amber maple syrup on my pancakes.
