Asian Chopped Salad with Peanut Butter Dressing

Asian Chopped Salad
Servings: 4

Ingredients:
Dressing
½ cup peanut butter
1 Tablespoon soy sauce
1 tablespoon rice vinegar
2 tablespoon maple syrup
2 teaspoon sesame oil
¼ teaspoon sriracha
1 clove minced garlic
juice of 1 lime
½ teaspoon grated ginger

Salad
1 cup shredded carrots
1 cup red cabbage, shredded
½ cup edamame
½ cup cashews
1 red pepper diced
1 cucumber diced
1 green onion
1 chicken breast shredded
2-4 tablespoon cilantro

Directions:
Put all dressing ingredients in a jar and shake well.
Arrange all chopped ingredients in a bowl.
Add dressing and toss well.


You could swap out shrimp for the chicken or use other vegetables.

Wow, I'd make the salad just for the dressing! In fact, I think I will! What a wonderful fusion of cuisines!

I followed the recipe but without chicken (we had chicken meatloaf with it) and used half cashews and half peanuts. Very good. DD's loved it and will take leftovers for lunch today. Will definitely make again. Thank you for the recipe.

I made this tonight with a few substitutes for things I didn't have. I used rainbow slaw, fava beans and toasted slivered almonds. Delicious and filling - I couldn't finish. The peanut dressing is wonderful - I could eat it with a spoon!
