Always looking for a low carb, crispy side dish or snack. These are great and I'll make another batch this coming week.
Use whatever seasonings you like - one person said she loves parm cheese, smokey paprika and/or cumin on them. I just salted.

Zucchini Chips
Thinly sliced zucchini (I used a mandoline)
Spray oil (I used Pam)
Seasonings you like
Preheat oven to 275. Line a baking sheet (or two) with parchment paper. Spray with Pam. Lay zucchini slices on the sheet, do not overlap. Dry slices with paper towel. Spray slices with oil. Season (LIGHTLY).
Place in oven for about 1 hour and 15 minutes, until slices are brown and crispy. If some need more time, put them back in the oven.
1 serving is 15 calories!
