Zippy Ham 'n Chicken Salad Sandwiches
12 slices Multi-Grain bread
Softened butter
2 c. cooked chicken, small dice
2 c. Pepper ham, small dice
(Get your Deli clerk to slice it 1/8" thick; it makes for an easy dice)
2/3 c. crushed pineapple, well drained
2/3 c. (more or less) mayonnaise
3 TBL finely chopped pecans
1/4 c. chopped green pepper (opt.)
2 scallions, thinly sliced (just the white)
Dash of black pepper
6 slices Pepper Jack cheese
Butter one side of bread slices; mix all ingredients except cheese.
Place a generous portion of the mixture on unbuttered side of (6) slices of bread and top each with slice of cheese.
Close sandwiches with the remaining bread buttered side out.
Grill on both sides until cheese starts to melt and sandwiches are golden.
