Yellow Wax Beans

My husbands favorite bean is yellow wax. I just planted a ridiculous amount of them. I know that I am going to get very tired of them unless I come up with various ways to prepare them. Any ideas will be gratefully accepted.

ohhhhh, wax beans - mah fav!!

the best thing is to blanch and freeze any 'excess' for the winter.
a bean is a bean and frankly I'm not sure attempting to "hide" a bean is a good approach.

as of 'today' I've got one quart left from last year's crop.

when you can go from picking to freezing inside 30 minutes, lima, green and wax beans are absolutely a superb freezer candidate. compared to commercially frozen or (ugh!) canned - your own garden crop will shine.

I grow as much green / wax / lima bean and peas as space allows - fresh preserved from the garden beats anything you can get in a store.

after a blanch, I turn them out onto a towel to dry off excess moisture, put on a cookie sheet in a single layer, so they freeze as quickly as possible, after freezing put them in quart bags.

every dinner guest that has been treated to my garden fresh frozen beans/peas has raved (ummmm, not all dinner guests make the A-List...)
which is nice, but I personally find them superb, and personal trumps, imho.

My husband Tom's favorite also. Please understand that I'm not trying to disguise the bean. What I am looking for are various ways to prepare them that enhances them. Butter of course, and summer savory is good with beans. I like your freezing method and will try that. How long do you blanche them?

I've planted 75 feet of them so they will be coming out my ears. I'm also growing limas and just about every other summer veggie. My garden is about 2,600 square feet so I have plenty of room.

A few ideas, Leni:

I love 3-bean salad. Yellow beans, green beans, kidney beans, red onions, vinegar, salad oil, and herbs and seasonings. Use any other beans you like!

Pickle the beans whole in a dilly-spicy brine and process them, for a wonderful garnish in Bloody Marys, and salads.

For some reason, this combination is absolutely a wonderful chemistry: Steamed yellow beans, mashed potatoes, grilled ham steaks. Don't know why, but it's fabulous!

I like them steamed, then add bacon, butter and season them.
Or cook them with red potatoes and onions in some chicken broth, then add some smoked ham chunks.

>>blanch

50-60 seconds in a rolling boil

>>2600 ft2 - wow, that's a good size plot! we've got about 800 ft2 - enough to keep me busy [g]

The community garden center is around 26 acres. There are over 900 gardens and the rest is park. Very nice.
