Yellow squash and cucumbers

What can I do with these? I have cucumbers coming out of my ass and I can't eat them fast enough. I don't want them to go bad. Same with the squash. I have 7 of them in my fridge right now and because I don't eat it - I need to find a way to do something with it so it also doesn't go bad. I gave 2 to mom and hubby is taking 1-2 to work.

Any suggestions???

There's a few recipes floating around here. Someone posted about stuffing zucchini with a ground meat mixture. I think LT posted a PDF file on what to do with squash. I'll look for something that Tom might like and let you know tomorrow.
 
If the squash is the courgette (zucchini) type, you can chunk it and then freeze it. These can be added to stews and things or used for soup later on. There are also some pickling recipes, but I guess you would not have time for that.

I have seen a pickled cucumber recipe as well. A nice way is to serve cucumber as a side is slice it and steep it in vinegar with a little sugar.
 
i dont know if it is the courgette type. it is bright yellow and the same shape as a zucchini (i might have just answered that question). i gave some to mom so maybe she knows if it is or not.

i can pickle the cucumbers ... well i can try. LOL i may just give some to the neighbors so i can actually close my veggie drawer in my fridge.
 
Here's the recipe for the refrigerator cucumbers. The ones grandma used to make. I think Tom liked them when I made them.

You've got yellow squash and zucchini (courgette). Slice them and saute in some oil. Add some garlic, salt and pepper. Tom should like them. I've got a casserole I can give you the recipe for ......you won't like it. lol

Have you looked through all the recipes here?? There's some really good ones!

no i havent looked yet. i just gave away 6 cucumbers to justin's coach and 2 squash and 2 sweet peppers to the assistant coach. i have a squash that is actually too long to put in the fridge drawer. LOL

i will look for some recipes and see what i can come up with!

I've made curried cucumbers and spicy cucumber salad - both were quite good. And I love to make tzatziki and serve it with grilled chicken or as a dip with pita chips.

For the squash, I have a recipe for grilled zucchini that would probably be good with squash, too. Cut squash in half lengthwise and marinate in EVOO, lemon juice, garlic, S&P for one hour. Grill until grill marks appear and squash is tender but still firm. You can also serve this over pasta with more olive oil and lemon juice. HTH.
