1 1/2 teaspoons cumin
1 teaspoon mustard powder
1-2 tablespoons curry powder
2 medium yellow onions (diced)
2 teaspoons ginger root (minced)
1 clove garlic (minced)
2 medium sweet potatoes (cut into 1-inch cubes)
8 cups water
3 cups dried yellow split peas (rinsed)
1 bunch kale (discard the tough central rib, and finely chop)
In a large pot sauté onions on medium heat for 5 min.
Mix in spices, ginger, garlic, cook for another minute.
Add sweet potatoes, water, split peas, stir well.
Cover pot and simmer until the split peas are tender and are beginning to break down (usually half an hour to an hour). Stir regularly. Add water if necessary.
Add chopped kale. If you prefer the kale crunchy, remove from heat and let stand 5 to 10 minutes before serving. If you prefer softer kale, continue to cook until desired softness is reached.
