I leave the heads on trout and eat the little piece of cheek meat. But the fish and take off the heads then I’d eat it!

So what are they? Chicken or Turkey? I’ve had calf fries and like them so would give these a try, breaded and fried like chicken gizzards.

Unless you're a vegetarian I have no idea why anyone wouldn't. I had really gamey tasting venison a couple of weeks ago.Would You Eat This?
Venison loin, fresh morels and asparagus.
I'm not wild about venison, but the rest....
Yes!

I’ve had chitlins before and was being polite eating them but never went out of my way to eat them again.

There are multiple things I won't eat if I don't know from where it came. Growing up, we raised/grew/trapped/caught it. It does make a difference! Scrapple comes to mind.....I’ve eaten heart, liver, ears, snouts, cheeks, testicles, and chitlins - chitlins I tried and not a fan. I knew a brain surgeon and he told me not to eat brains due to you just don’t know what you might contract from them. I took him at his word.
I’ve not had scrapple but love head cheeses and liver sausages, etc. it’s my Bohemian upbringing. There are multiple things I won't eat if I don't know from where it came. Growing up, we raised/grew/trapped/caught it. It does make a difference! Scrapple comes to mind.....
