working with frog's legs

I've got a couple of pictures but cannot (means am not willing to do the chore) get them out here at this time..

However...

I've got 5 pounds of frog's legs, 6-8 count, that I'm working with for the Mardi Gras party tomorrow night.

I love frog's legs. I've never worked with them. Interesting. I'm working with them as though they were chicken. After all, frog's legs invented the line 'tastes just like chicken'. So, they've been soaking in a spiced buttermilk bath since yesterday. Thursday.

I made the remoulade this afternoon.

I really should get the camera.
 
Did I mention the Paddy Cocktail? Or that Lou completely restrung the lights around the hot tub and fence in honour of Mardi Gras??
 
Best frog legs I ever had were at a French restaurant in Santa Monica that's long gone. My father-in-law and I used to order them because we loved them, but they had the added benefit of grossing out our spouses.

My recollection is that the were lightly floured and simply sauteed in butter and garlic, with a bit of wine. What could be better?

When I get them they are always still attached. It's fun making them do a little dance across the plate! LOL!
 
Those look great! We took a riverboat cruise out of New Orleans several years ago and had the best frog legs that I have ever eaten. They were well seasoned and lightly fried, just like yours. :yankchain: Now I want some.
 
I used to really enjoy frogs' legs - way back when they were a U.S. product. Both in restaurants & cooking them myself. However, these days they all come from Thailand &/or China, & I'm definitely not a fan of that product.

Vera, that makes me hungry! Now that I have a perfect boat, I may have to try to "fish" for bullfrogs with a floating red worm. Or course, I might have to go at night with the headlamp.
