White Bean Tuna Salad

•2 (6 oz each) cans tuna, canned in oil
•2 (15 oz each) cans white beans, drained and rinsed
•1 medium red onion, thinly sliced
•4 tablespoons olive oil
•2 tablespoons red wine vinegar
•1/2 cup fresh parsley, chopped
•1/2 teaspoon red chili flake
•Kosher salt and freshly ground black pepper, to taste

1.Drain the tuna and add to a large bowl. If the tuna was packed in olive oil, you can reserve it to use in the dressing if you wish.

2.Add beans and gently stir to combine.

3.In a small bowl, whisk together the oil, vinegar, parsley, chili flake and salt and pepper. Pour over tuna and beans.

Serve and enjoy!

Well I'm going to make this tomorrow for dinner, with crusty bread and a light cuke salad.
However.. I could find no cans of white beans in the stores.
So, I'm going to use black eyed peas.
Geesh!

The recipe doesn't call for chilling, but I am.
Let me say, the taste test was yummy.

Oh, yum, Sass!

Bet this would be good with lots of varieties of beans. And/or chickpeas.

Now that I know the black eyed peas taste lovely in it, I may adapt the recipe like that now and then.
