What's On The Plates Sunday June 22 > Saturday June 28 2025

Too hot to cook at tonight. Tuna salad and boiled eggs made early while kitchen was still bearable. Dinner will be catch as catch can. On hand: brie, Boursin garlic & herb spread, port wine cheese spread, tuna salad, tomato salad, hard boiled eggs (whole, on salad or egg salad can be made), salad greens, cherry tomatoes, fruit, and assorted bread.
 
Tuesday night, Taco night! I have some l/o freezer chicken taco meat, freezer refried beans and I'm making a pot of Spanish rice. I'll make Fiesta Tacos (large,, knife & fork tacos). I think I'll use the combo corn/flour tortillas, I've not tried them before so why not now!? I'll chop up some tomatoes, lettuce and avocado too.

Just thinking of cooking makes me feel sick. Had a small 1/2 tuna salad sandwich.
 
It's too hot for major meal-making. We had a one-pot wonder with pasta, sausage, tomatoes, onions, and peppers, herbs, and garlic from the garden. I had a salad kit that went well with it and I could add garden cucumbers. In hindsight, I wish I had drifted some fresh garden parsley over the pasta.

I think a better description for these tacos might be, Meal-size Tacos.. :ROFLMAO: As DH sat down to his taco, he asked, "you only made me one of these?" Yeppers...

Watching TV news, and thinking of having a little after supper snack. Hmmm.
Popcorn sounds good, but I didn't want to chance corn husks vs, diverticulitis attack.
NOOooo Thank You! ... LOL, so I made a substitute that can be eaten like a finger food like chips or popcorn. Leftover (not sauced ) spaghetti, fried with a little oil, butter and salt and pepper.
I cook it well, so that some of it is crispy. It's like eating a birds nest. I have a lot of napkins at hand to wipe the drizzle / drip off my chin.

I'm trying some new things today. First, I'm starting Easy 20-Minute Homemade Bread, but it will take a bit longer 'cuz I'm using the "dough" setting on my bread machine to save a little work. Dinner will be a version of Gnocchi Skillet with Chicken Sausage & Tomatoes, I don't have any gnocchi in the pantry, so I'll improvise ;). I'm also thinking I'll make Caprese Salad Bites, 'cuz it sounds good and I've got everything to make them. Won't be the full recipe, but enough for the 2 of us.
