ooooh.... hold the blue - just slice me a chunk o' the beef!

a most fabulous dish I've had was beef tartar made with a high sear cut. the crusty sear bits grinds into the middle raw . . .
wow-oh-wow, really good stuff.

The blue cheese was not of high quality and a strong gorgonzola would have been better.
