What's On The Plates Easter 🌷✝️ Sunday April 5 - Saturday April 11 2026

We didn't have this last night as planned but we are tonight! Beautiful day for grilling!

We had roasted duck, overcooked asparagus, melting potatoes, grape leaves, strawberry salad with poppyseed dressing, deviled eggs, and pickle beets for Easter. The fella roasted the ducks and, now, we have a quart of duck fat.

Wow, that looks fantastic, Kathleen! How were the melted potatoes? I had the recipe printed out to make, but haven't gotten around to it.

We went to Red Rock for supper. Their small ceasar was big, halibut was very good and could only eat 2 pieces and gave Matt my 3rd. The slaw was unusual wit a herbed vinegar and oil dressing. It was all good.

The melting potatoes were a hit. Not one remained when dinner was done. I did spoon the remaining seasoned butter over them prior to serving which simply adds something. Now I did not make them completely as written on many websites because someone had ducks roasting in the oven most of the time, and I really only have 1 oven. So I used my cast iron and browned the potatoes on both sides as I would if I were roasting them. Then I pour in the liquid and covered them before turning them down to simmer. When the liquid was evaporated and they started to sizzle, I finished them without the lid in the oven. I really could not tell the difference but shaved a ton of time off of the recipe and will likely make them this way from now on.
 
Nancy just put together a big meatloaf for tonight. She does that every trip here as Heather doesn't cook (why should she? - she does the dishes) and Matt doesn’t make meatloaf that I know of. Everyone’s favorite sides for tonight are broccolini, leftover asparagus, and a baked potato.
I went with meatloaf and a salad. The meatloaf doesn’t look like much but tasted great.

Tomorrow night we go to 350 Main for dinner. They fired the chef today and looks like Matt will take over executive Chef again mostly to train cooks and do the paperwork which the fired chef did poorly. He will still oversee Big Dipper duties but the staff he has are reliable.

Sharon, the Realgood chicken products are the best new thing ever.
Not many people I know have tried their products.
The breading is fantastic, (chickpea flour) -plus being low carb high protein is a bonus.
I have some of the nuggets.
Hmmm, maybe that for dinner with a salad.
 
Lora, I looked for the Realgood chicken today, no dice in the store I was in. Will keep looking.

Dan, I put malt vinegar on my fries - never thought of putting it on fried clams or fried fish. Love the idea!

I put malt vinegar on my fish and chips but prefer a gods strong flavored white vinegar.

I've only ever seen those products in Walmart and I believe Meijer.
I follow Realgood on Facebook.
They now have the low carb beef fried steak (with gravy), plus a bunch of other good things.
