What's on the Labor Day menu, Monday, 9-5-11

I'll be the odd man out here with a Lake Erie perch dinner instead of the traditional grill food. It's pretty chilly here today in the 60's, so I didn't mind cooking while we has a few windows open for some circulation. Everyone loved those Panko crumbs, and DS cooked all 40 fillets while I did the breading.

I didn't have time to take pics; except I did take DD's rice Krispy Treats she made.

We are all like Weebles but we don't fall down.
 
Gluten free dinner tonight: Chicken breast, ham, provolone, mushrooms, onions, garlic, cooked in olive oil and port and gluten free spaghetti made with corn.

Pan-fried burger topped with Tabasco hot & spicy ketchup, pickle chips, homemade macaroni salad, red seedless grapes and green salad (butter lettuce, radicchio, sliced mushroom cap and sliced tomato) dressed with ground sea salt, ground pepper and lemon juice.

I had a rib eye that was 1 3/4 inch thick, and 2 ears of corn. Put them on the grill, but didn't take any pics. We shared the steak. Close your eyes and picture steak & corn. That's it.

Boy! Was it good!

I made a country style creole infused pork roast with garden fresh green beans, pasta and a salad.

That looks fantastic Barb. The pork looks so moist. Is that the drippings or a gravy on the pork? What's in the pasta dish? And the salad and beans would hit the spot right now.

Didn't spend much time with the marshmallow endeavour.
It was COLD out there, and besides, it was just myself and my other younger niece and BIL doing it lol

Thank you Sass. Glad you had a good time. BTW How many of those marshmallows would it take to make a batch of crispy treats? It usually uses 40 regular size but if you used 40 of those WOW you would need a bathtub of rice crispies.

A recipe may have indeed been on the back of the bag.

Thanks Peeps. It's just the drippings (bacon fat and the juice from the roast). I don't make a gravy if I'm not having potatoes. lol The pasta is the Lipton brand fettuccine and spinach with parm cheese.
 
Even though today's cookout was a washout with the rain, there was a time when it was dry enough to grill hot dogs and hamburgers. The sides I made were potato salad, macaroni salad, cold pasta salad, coleslaw, deviled eggs and baked beans.

Didn't take a picture of any of that, too many people at dinner time, but I did snap a pic of the apple pies I made for dessert. I used my new Emile Henry pie dish for the first time. That thing is huge.

Yum! I love apple pie!

Thank you LS. I decided to save the roll carbs and have mac salad carbs instead. I think it was a good choice but I did miss the burger with fried onions and cheese etc on a roll with the juices dripping down my fingers. LOL
 
We are having a fish fry this afternoon because our DD from Orlando is home for the weekend, and she missed the fish fry on her sister's birthday in early August. I went fishing on Saturday morning and brought home 20 Lake Erie Perch that gave me 2#7oz of fillets. That will be plenty for 8 people along with coleslaw, potatoes, corn on the cob and baguettes. We have leftover apple crisp & vanilla ice cream left over from another event yesterday, so that will be dessert.

Had a few cubanellas that needed some loving, so I stuffed them this morning with my homemade Italian sausage (enhanced with egg, bread crumbs, Worchestershire and mustard) and baked them off. I'll divide them and put them in the freezer for another day.

Before baking. I love these, so I even chop up the caps and bake them.

peep...when I have ever made them..I used the whole bag regular size...or the whole bag mini size. I would imagine the large Giagantic size, if they are the same weight; then I would do the whole bag.

DD uses shoprite or other store brand marshmallows.

I will only make them if I have Campfire (I think it's Kraft Brand) marshmallows. I don't like the taste of the store brand ones.
That's just my Opinion.
 
I made the pan-grilled bison steaks with chimichurri sauce - they were great, and the sauce was wonderful. I can't believe I've never made it before - I love vinegar of all types, as well as herbs, so I really enjoyed it. DH suggested mashed potatoes, so I made that, and we steamed some frozen garden peas. The sauce tasted great with both the potatoes and the peas as well.

What a variety of dinners! They all look delicious!

GG, I've never had bison steak before. I've had burgers but not steak. That looks sooooo good! I'm gonna have to try that sauce too! That whole plate looks amazing!!!
 
We had Margheritas with a frozen snack assortment, followed by 1-1/2# lobsters with melted lemon-butter, sweet corn on the cob, & a salad.
