i'm guessing dollars to donuts that we'll be having baked skinless chicken breasts, nuked spuds, a can of some veggie, cranberry sauce, and polish rye. dw's standard go-to dinner.
sounds interesting, a little scary for me but interesting.Dinner will be broccoli mac & cheeze. But I'm really looking forward to lunch. I've been marinading tofu for two days in agave syrup, soy sauce & pepper flakes and I fried it up last night. So lunch will be fried tofu & cabbage on home made wheat bread.
Tofu done right is really good. Its basically a sponge that can take on many different flavors and textures. But it has a steep learning curve. And badly made tofu can be very very bad.sounds interesting, a little scary for me but interesting.

You mean the enchiladas? I think you could substitute ground or shredded beef with no problem -- beef and red sauce are a natural. My mom just used ground beef, and her enchiladas were one of my favorite meals. She was CANADIAN but we lived in San Diego and she loved Mexican food.thank you. btw do you have a recipe for you dinner but with beef? it looks yummy!!

We're having breaded pork chops, butternut squash, peas/green beans, apple sauce and noodles alfredo.
thank looks fantastic!! no mozzarella? yummy! i'll come for dinner and bring my supped up garlic bread!!We did my rendition of Easy Chicken Parmesan.
I took two chicken breast that I cut off a whole chicken last week. Dipped them in a Heavy Cream and Egg wash, then rolled them in seasoned bread crumbs.
Fried the breast till golden brown. Put the breast in a baking dish on top of some Marinara sauce. Topped with cheese and more sauce. Baked for 25 minutes at 350.
Pulled out of the oven and topped with Parmesan and Cheddar cheese and baked for 6 minutes to melt and then served. Had sides of green beans, creamy pasta salad, and dinner rolls. Had a nice Australian Shiraz to compliment it.
