What's For Dinner - Sunday May 3rd - Saturday May 9th 2026

Decided on a piece of quiche and a smaller than planned salad.
I'll take the other piece to work tonight.

(This was yesterday, but I'm posting in this week's thread to avoid confusion.)

Kathy and I spent Derby Day with friends Jan and Ann, as we do every year. It was a raw, gray day, so we cooked the ribs and ABT's in the oven. Both were delicious, as were the other sundries we snacked on during the afternoon and evening.

After the race, we got into our pj's and re-watched The Devil Wears Prada. Lovely time!

Cheese board and Jan's delicious smoked salmon mousse. The crackers on the board were from TJ's - horrible! No salt, tasted like cardboard. We fed them to the squirrels (who love them!).

Jan, Ann and requisit ABT's, oven roasted this time.

Run for the roses! The horse that Jan picked won our $20 pot.

Ann makes us Strawberry Shortcake for breakfast every time, since she found out that my mother made it for me around my birthday.

We had the city chicken, and the kids were here to celebrate DIL's birthday. It was a screaming, running and crying P I T @$$ loud day. There was no rest. Of coarse, Great , Great grandma catered to their every whim. LOL. We all enjoyed the strawberry shortcake for dessert.

We had friends over last night. I made a small, but overloaded paella. I had a lot of trouble with the clams and mussels, many didn't open much, I had just bought them that morning. The rest was good. We never did eat the dessert, crema Catalina. But we did manage to kill of 4 bottles of wine.

Looks wonderful. I’m due to make a paella.

Our two KfC’s are pretty good. I guess YMMV… we haven’t gone in months. Nancy has been cooking up fresh chicken for the things she makes. I’m wanting to grill chicken soon. I’ve got wood to o burn.
I guess the thing I don't like about some of the KFC chicken I've had in the past is that slimey fat under the breading, mostly the extra crispy.
This chicken is full crispy skin, with the chicken cooked to perfection.
The only other chicken I've had to compare is Church's.
But that's all the way up in Toledo.
I wasn't about to make that drive lol
Especially with only having 3 hrs of sleep since I got home this morning.

I agree. I only had Church’s once on the way down to FLA. there aren’t any up here that I’ve seen. 😢
And no Bob Evans either. I had the lemon
Meringue/cheesecake pie once and loved it.

Beautiful day today for the first grilled dinner of the season!

Lamb chops, cheese-stuffed mushrooms, baby corn. Trader Joe's sells the baby corn in little plastic bags and they are delicious! Very versatile - you can eat them right out of the bag, roast them, steam them or whatever. I'm going back to get more!
