I premade meatloaf last Sunday and it’s been melding its flavors in the fridge.

Nancy made a strawberry triffle for dessert.I just made a gin and tonic - we had a Costco boxed frozen pizza in freezer. She got it out for tonight and there were two huge square pizzas in the box.. Looks like we will be eating pizza or a few days. Burgerstomorrow? Lovely day here.

I'm making Chicken and Hummus Gryos for dinner. I didn't realize I don't have much hummus in the fridge, so I whipped up a batch of homemade Dill Hummus...saved dill pickle juice and home-grown dill came in handy. DH isn't big on hummus, unless it is dill hummus.

I really love this! Served with heirloom tomato, Maldon salt, basil pesto. Heirloom tomatoes are usually better than other storebought tomatoes this time of year - this one was blah.

Easy Dill Hummus

Servings: 6
INGREDIENTS
1 (15 ounce) can chickpeas, drained and rinsed
3 tablespoons lemon juice
2 tablespoons tahini (sesame paste) (or nut butter of choice)
1 tablespoon olive oil
1⁄4 cup pickle juice (dill)
3 garlic cloves, minced
1 teaspoon dill weed
salt and pepper, to taste
STEPS
1) Combine ingredients in food processor. I find that if you put the liquid ingredients in first, it blends better.
2) Blend until well combined and creamy.
3) Refrigerate at least 2 hours to allow flavors to develop.
