Sticky chicken with steamed carrots, COTC, and garden tomatoes and cukes. Watermelon for dessert.

I made the sauce in cast iron, spatchcocked a small chicken and roasted it right in with the sauce. It made it one pan clean up for the chicken.

Forgot to mention this.
I nearly told the server that today I'm celebrating his birthday.
They would have brought out the big Sombrero and started singing with the guitars.
He would not have liked that lol
Jules did it one time when we went there for her son Ben's birthday.
He wanted to crawl under the table.

I did saute my teeny chanterelles in butter, added a couple of eggs and cottage cheese for extra protein.

I didn't want any bread and wondered what I should have to go with. Then a tune popped into my head ....

"Hey baby, I hear the blues a-callin' Tossed salads and scrambled eggs" Perfectly perfect!

I found the recipe here. The changes I made was the make the sauce in the skillet and spatchcock the chicken. I put the chicken in the pan and flipped it to coat it completely to start it skin-side down. In 45 minutes, I flipped it again, and spooned sauce over so it was coated thickly on top. After another 30 minutes, spooned more sauce over again and let bake for another 10 minutes. Then let it rest while I steamed carrots, which went wonderfully with the sauce!

Very tasty and fast clean up. I'll make it again!

Yesterday, my friend Christine and I saw a fabulous production of Joseph and the Amazing Technicolor Dreamcoat. Tim Rice's lyrics are hilarious and Andrew Lloyd Weber's mix of musical genres - so delightfully entertaing!

We were spending the night in Salem, so we wandered around a bit in the better weather. Had dinner in a seaside restaurant, sharing baked oysters (neither of us cared for them) and both of us ordered sole katsu (very good).
