What's For Dinner? 🙂 Sunday May 17 - Saturday 23 2026

Ok found it, I had posted this in last week's thread.

I pan fried the soft corn tortillas in bacon lard, then melted monterey jack inside, added a chicken, sauteed peppers and shallots mixture, a layer of eggs scrambled with sour cream, a touch more of the chicken/veggie mixture, Chipotle Tabasco sauce, and fresh cilantro. I should have made a couple more of them, they were good!

Okay so it wasn't dinner, it was actually lunch...oops. I am all over the place today!
 
I went to the Metropolitan Market to shop for canned and bottle fish - way too expensive. I’ll go to the Ukrainian market and H-Mart next. I did buy some expensive cheese, though. I got one of their fresh baked baguettes to have with our leftover tuna salade and anchovy sandwiches tonight. Utz potato chips were on sale and got those to go with the sandwiches.
 
I guess I'm sold on Tyson extra crispy chicken strips.
I had been buying the Realgood strips, but lately theirs has been lacking- as in.. not many strips, but a whole lot of oddly shaped pieces and crumbs in the bottom of the bag.

I drizzled some Blues Hog hot honey 'q sauce on.

I wanted to try this recipe called Million Dollar meatloaf. It was tasty, but I think I prefer my usual meatloaf over this one. Served with mashed potatoes, sauteed beans, corn on the cob, and citrus salad. Sometimes, I am like a five year old when it comes to foods touching. Happily family and friends have gifted me with a variety of divider plates. The first divider plate was given to me by my mother who thought it would humiliate me. I loved it....and the rest is history.

We're having halibut, marinated and then grilled on the panini grill, pan roasted asparagus and noodles (from a box, shhhhhhh! :ROFLMAO:) Easy enough and sure to please. I made an ice box "cake" yesterday...maybe we'll have room to try it tonight. Graham crackers and blueberries....yum!

What makes it "million dollar"?
 
Well, I planned a mostly-grilled dinner, but I don't really have my "grill legs" yet this season. I overgrilled everything.

Greek marinated lamb tips, russet potato slices, bok choy. My tzatziki (Frugal Gourmet's) was perfect.

BTW, grilling does not do potatoes any favors, IMO. But I wanted to try it.
