What's Cookin? mon 11/14???

It is too early to think about cooking but I have nice, thin chicken cutlets in refrigerator...thinking of breading and sauteing them...but that is boring??? hummmmmmm :confused:
also thinking of either butternut squash or acorn squash and taters.........

We will most likely have the leftover lentil soup. Maybe soup, salad and sammies. Or maybe linguine cooked in the lentil soup with tomato sauce added.
 
I know that I'm going to make some guacamole, but other than that I'm not sure.

Only have a few days to make room in the freezer for turkey etc. arriving on Thursday. Going w/ ground beef.

Shepherd's Pie (with mashed sweet potatoes)

Or

Spiral (jelly-roll) Italian-style meatloaf stuffed with spinach, shredded mozzarella, rehydrated sun-dried tomatoes, egg, onion, worcestershire, brussels sprouts & baked potato with sour cream.

Put up new blinds in the kitchen..
DD made Taylor ham egg & Cheese sammies for lunch.

I guess I'll make a salami sandwich or something.
I'm not fussy....
 
We had linguine cooked in the lentil soup and tomato sauce till the linguine absorbed all the liquid and got tender topped with fresh frated romano and parmesan cheese. With a slice of 10 grain bread on the side.
 
Scratch the earlier dinner plans...after my dad's cardiology visit---he is not feeling well at all--no appetite, cannot eat more than a couple of bites, exhausted, short of breathe-----
I had a ham and cheese sandwich with chips...he had just a slice of fresh scali bread toast.....
he starts a new med tomorrow....

Dinner tonight will be a round steak cooked with garlic mushroom soup, onions and maybe some red wine. Sides will be mashed potatoes and a tossed green salad. Got to start using up that lettuce we're growing.

most of the heartier veggies @ 6-ish this morning, added other ingredients close to end of cooking~

Since I had my rotisserie out yesterday, I decided to leave it out and do a whole chicken. Oh they turn out so tender and juicy! Made some more mashed potatoes and brown gravy, plus peas.
I had 2 wings and a leg. Love the dark meat.
I wish I had a rotisserie. That chicken looks so nice and brown. YUM Nan
 
This was tonight's dinner, along with a nice green salad with the usual salad toppings (marinated olives, marinated garlic, croutons, etc., etc.) - quick, easy, delicious.


Breezy Ground Chicken or Turkey Faux Stroganoff

1 pkg. ground chicken or turkey
1 small or ½ medium/large yellow onion, peeled & chopped
8 ounces Cremini mushrooms, rinsed & sliced thickly
4 tablespoons butter
¾ cup chicken broth (I used Swanson’s)
¼ cup dry sherry (Taylor’s here)
16 ounces sour cream (regular – not low-fat or fat-free)
Approx. 1 tablespoon fresh thyme leaves or 1 teaspoon of dried
Coarse salt & freshly ground black pepper to taste
Flat-leaf Italian parsley, chopped, for garnish (optional)
Whole-wheat or regular egg noodles, cooked according to package directions

In a skillet large enough to hold all ingredients except noodles, melt butter & add chopped onion. Saute until soft & “just” starting to brown. Add sliced mushrooms & sauté until softened & releasing liquid. Remove to a bowl & set aside. Add ground chicken to pan & sauté until no longer pink. Add mushroom mixture back in, along with chicken broth, sherry, salt, & pepper, & simmer for 5-10 minutes. Taste for seasoning. Gently stir in sour cream until thoroughly combined, & cook until heated through. Check again for seasoning & serve over noodles, garnished with chopped parsley if desired.
 
Had Pizza takeout... from a new place we never tried. Wasn't that bad, but the sausage topping was razor thin slices of sausage. It was cut so thin, you could see through each slice. I would call that,"Sausage Flavored" Pizza.
 
The easiest thing that I could come up with....tamales with a salad of iceburg, tomato, avocado, green onion, oil and vinegar:
