What are you eating Sunday, 6/28/2026 to Saturday, 7/4/2026?

🌹 Still trying to get it right.
Trouble sleeping tonight. I prepped chicken for pasta salad which I will make later today. So dinner will probably be pasta salad and hot dogs someway (leaning towards "beanie weinies" or an egg scramble with hot dog coins, onion, and potatoes added).
 
This was yesterday, but putting it here to avoid dinner thread confusion.

I'm a sucker for "yellow sticker specials" and I picked up two small packages of boneless country style ribs (love the oxymoron!).

I wanted to try a Cook's Illustrated recipe for gochujang-glazed ribs on one and Ah-So on the other. Seasoned both pieces with salt, pepper and garlic powder and set up my kettle with a charcoal C, hickory chunks and water pan as directed.

Took about 3 hours for the "ribs" to get to 200. Let them rest in a dry cooler.

I put some bacon on to the still-hot fire, then a packet of carrots and onions.

The ribs were leaner than I thought, so were quite dry. I should have just grilled them hot and fast. The glazes were delicious. The bacon and vegs were great.

Another new recipe I tried that was less than successful. But I ate it anyway.

The was a miso/honey/soy marinade for baked chicken thighs. A tad too charred, but not horrible. With peas and baby bellas.

I ruined my dish which was supposed to be calamarata pasta with squid in its own ink. I think it would have been delicious. However, I discovered mid-recipe that I had purchased squid in brine. Pretty much a meh meal.

The salad of garden cucumbers with heirloom non-garden grape tomatoes and feta was very good.

I wasn't feeling like actually cooking this week. So when I went shopping I picked up a Bob Evans pack with 2 individual mashed potato cups, a jar of Heinz Pork gravy, and a bag of Athens Spanakopita Phyllo Bites (they are very good and quick in the air fryer). No picture of meal just pictures of the products. One potato with gravy and six of the tiny spanakopita bite. Quick and easy and didn't heat the house up.

Well, after producing a couple of disappointing offerings recently, I got a win tonight!

I had another frozen pie crust and a pile of bacon I recently smoked so decided on a Quiche Lorraine. Can't remember the last time I had it; not sure I've ever made it.

Man, is it delicious! Added a couple of drops of Frank's hot sauce when plated. Served with steamed spinach with a bit of barley that I had in the freezer.
