This was last night, actually. We do the Polish food on the Saturday and Chinese (have I ever told that story?) on Easter.

Blue Seal kielbasa from Chickopee, MA ("Kielbasa Capital of the World"), Polish seeded rye bread from the Berkshires, HB eggs with horseradish, potato salad with garden chives, asparagus.

Man, that kielbasa is the best!

Last night, Dad and I joined Kathy in her traditional Easter dinner - Chinese take-out!!

Kathy brought all the decorations to my house and we ordered the enormous Pu-Pu Platter for Two and pork fried rice which I doctored up. Ridiculous amount of food.

The usual suspects and myself had an early Easter Dinner out ..........
It was a Buffet setting, and I made a perfect Pig of myself........

Tonight ;
First time for everything !
My first Flat Iron Steak,
Marinated ( EVOO, Minced Garlic, Parsley, Rosemary, Chives, Dry Mustard , Cabernet, S&P..)
then Pan-seared 3 minutes per side...........
Mashed Spuds under Onion Gravy, Peas & Carrots...........

the potato soup turned out quite nice - dead simple to make - does take time, tho.
dice potato
fine dice onion
fine dice celery
salt&pepper
simmer in water, barely covering, until potato breaks down -
stick-blend to puree
add light cream
