I made a haddock recipe from my friend Lynne's sister Kathy's cookbook Kathy is the chef-owner of the wonderful restaurant "My Place by the Sea" in Rockport, MA.

The fish is dipped in olive oil, then dredged in seasoned panko, then seared in a hot pan, finished in the oven. The sauce is a reduction of chicken stock, white wine, lemon juice and heavy cream, with kalamata olives, garlic, cherry tomatoes and mushrooms. Delicious! The haddock really didn't need that sauce, but I'm glad I tried it.

Served with baked Koginut squash and baby arugula salad with watermelon radish and heart of palm. Also delicious.

After I left my chiropractor appointment, I stayed in Defiance to both shop and stop by to see the girls, since the schools were canceled due to 3 more inches of snow.
The store there had no rotisserie chickens ready, so I grabbed a bag of lemon pepper rubbed wings, which I air fried.
Taylor Farms chopped kale salad on the side.
The wings are dinky, but delicious.
