I decided last minute to take two angus burger patties from the freezer, and made a double decker patty melt of sorts.

With lettuce, mayo, cheese and Tony Packo's pickles and peppers.

Bush's beans on the side.

Been having some issues lately so not sure what dinner will be.
I had some buttered pastina last night for dinner.
I have a corned beef. Hub loves CB. It's so easy to make in the IP. Maybe that - not sure if it will be sandwiches or potatoes and cabbage. Maybe both and make everyone happy.

I got so busy this afternoon with laundry and housework that I never made it to the grocery store in time to find a decent piece of beef to put in the crock.
?
I'll hold off on that for my next day off, Monday or Tuesday next week.

So I just made what I had, a hastily thrown together thing.
Tyson bbq chicken strips, bean salad and cottage cheese.
Works for me!

Well, I bought a package of what I thought was country style ribs (label said "pork loin ribs"). Turns out that there were two big, weird chunks of pork roast, each chunk with a rib attached.

So, I rubbed and smoked them only for an hour to 145 degrees. Let them rest while I removed the water pan and direct-grilled some baby purple potatoes (a chef on Ming's show said they were the healthiest) and some carrots. And then bacon. Then slathered BBQ sauce on the pork and charred them over direct heat.

Turned out surprisingly great!
