I went with the food.com recipe.

I had saved the aluminum quiche pan from a store bought quiche I'd made a while back, and am glad I did!
Can't find my pyrex deep dish pie plate.
I'm thinking I left it at a friends house or something.

Anyway, I used the ready made pie crust, which you can see pulled away while baking.
Still it's delicious.
Per the recipe- it suggests canned mushrooms.
No way, I used fresh.

Italian dressing marinated cocktail tomatoes on the side.

Sass, your quiche looked delicious! And aren't those cocktail tomatoes fantastic? Taste like homegrown! Every time I walk past my bowl of them I grab one!

Med, love your pasta dish! Wish someone would invent a no-cal, tasty pasta!

Thanks Lee.
Yes, I love those tomatoes!

Looks like I'm having quiche leftovers for brunch momentarily.
I found a lonely piece of fish in the freezer.
Not sure if it's cod or ....?
I'll make that for dinner, probably pan fried in butter with dill.
Not sure of sides yet.

Stomach still not feeling so great. I had half a boiled potato for lunch yesterday and scrambled eggs last night for dinner.
Had the other half potato for breakfast this morning. Not sure what dinner will be. DD mentioned breaded chicken cutlets with pasta. I may have a cutlet and mashed.

Craig made a simple tomato sauce yesterday at my request. Today, I stirred the last of our nduja into it, then served the sauce over penne, topped with some ricotta mixed with Parm R, plus some extra grated parm. Everything was mixed together to eat.

It would have been better with pecorino romano, but we are out and I forgot to put it on the list so none got bought.
