Vera's Roasted Garlic Gnocchi

Ingredients

3C baked potato - riced
15 cloves of roasted garlic
1 1/2 c flour
3 egg yolks
salt to taste

Blend all the ingredients till smooth but still slightly sticky. Divide into 4 pieces. Roll those pieces into ropes, 3/4 inch wide. Cut into pieces, 3/4 inch long. Roll along the back of a fork to make grooves. Place onto floured waxed paper. You can freeze for up to one month, or cook immediately.

Fill a large fry pan with straight sides with salted water. Bring to a simmer (not a rolling boil). Add the gnocchi. When they float to the top, time for two minutes. You can then transfer to another pan and saute with butter and grated cheese or make a sauce and cook them an additional minute or two in the sauce.

I am blown away, Vera. That looks sublime! I can't wait to try it. What kind of sauce is that? Are those pine nuts in the sauce?
 
That's the pan I roasted the pork ribs in. It has the flavour of the pork rub, the bottle of oktoberfest (most of it evaporated) remains, and the sauteed shallots. I put the pan back on the stove and added two cups of cream. As it came to a simmer I was able to bring up all the pork drippings. I had previously toasted pignoli nuts and tossed that into the sauce as well. I transferred the gnocchi from the water to the sauce and cooked it for a couple of minutes longer.
