Vera's Grilled Corn on the Cob

For 2 people

2T softened butter
1t salt
1t lime zest
1t chili powder
1/2 t cumin
1/4 t cayenne
2 ears fresh corn, silk removed, husks left on.

Blend the butter with the spices.

Rub mixture over exposed kernels. Press husks onto butter. Grill over med/hot coals, turning frequently. Dripping butter can make the fire flare. Corn is done in about 5-7 minutes, depending on heat and how often you turn.

For service, I pull the husks down; then tie them in a knot or bow at the base of the corn.
 
FM...you can rub that same butter under the skin of a whole chicken!

For the melon salsa I used 1C diced cantaloupe, 3T diced red onion, 1T diced jalapeno (the sliced in a jar kind), 1T juice from the jalapeno jar, 1T lime juice, 1T chopped cilantro. Pretty much...I don't really measure things. Let it sit an hour or so at room temperature.
 
That sounds perfect for a whole chicken! I roast them all the time, and I will be trying this on the next one. Thanks for the recipe!
