There are many recipes for tzatziki on the web, most are very similar to each other.
This is the one I made yesterday. Easy and delicious!
Tzatziki
3 inches of cucumber (I used an English cuke, not peeled)
1 cup plain Greek yogurt
2 T. chopped fresh dill and/or mint (I used both)
1 T olive oil
1 teas. lemon juice
1 clove garlic, minced
1/2 teas. salt
Lay 4 sheets of paper towels on the counter and use a box grater to grate cucumber. Roll the towels around the grated cuke and squeeze out as much liquid as possible. Place cuke in a bowl.
Add rest of the stuff, stir and taste. Add more salt if necessary.
