1/4 c chunky peanut butter
3 T apple juice
1 T soy sauce
1-1/2 T dijon mustard
1 t minced garlic
1 t lemon juice
1/2 t hot pepper sauce
2 c cooked turkey-cubed
1 c chopped lettuce
1 large tomato-cubed
1 c cucumber, peeled and cubed
1/4 c chopped onion
4 pita breads, cut in half
Combine first 7 ingredients in a bowl and set aside.
In another bowl combine turkey, lettuce, tomato, cucumber, and onion. Gently fold in the peanut butter mixture.
Cover and chill for at least 1 hour.
When ready to serve, spoon 1/2 c of mixture into warmed pita breads.
