Turkey Meatloaf with Mushrooms, Spinach and Feta

I keep trying to like ground turkey, but I keep thinking I wish it was ground beef or ground lamb.

This was okay. The original recipe said to top the meatloaf with BBQ sauce before baking, but I just couldn't see doing that. I made a thick tzatziki to use when serving, which made for a messy plating photo.

Served with orzo and Greek salad.

TURKEY MEATLOAF WITH MUSHROOMS, SPINACH & FETA


INGREDIENTS

1lb. ground turkey

1 large portobello mushroom, gills removed, chopped

1/2 cup (4 oz.) feta cheese (crumbled)

1 pkg frozen chopped spinach, thawed, squeezed dry

2 cloves garlic (chopped)

3 tsp Worcestershire sauce

1/2 cup Italian bread crumbs

1 egg (beaten)



Make tzatziki to serve at table.

INSTRUCTIONS

Preheat oven to 375

In a large mixing bowl, combine ground turkey, mushrooms, feta, spinach, garlic, Worcestershire sauce, bread crumbs and egg.

Place in a loaf pan.

Bake for 50 minutes
