Turkey Breakfast Strata

Ni pedo
1 tbsp vegetable oil
1/2 cup chopped green peppers
1/2 cup chopped tomatoes
1/2 cup diced onion
1/2 cup diced mushrooms
1/2 cup cooked chopped bacon
1 1/2 cups chopped cooked turkey
10 slices of day old bread, torn into bite size pieces
1 1/2 cup shredded cheddar cheese
6 eggs
2 cups milk
1 tsp poultry seasoning
Salt & pepper, to taste

Cook vegetables in oil over medium heat, until slightly soft. Add salt and pepper.

Grease a 9” x 13” baking dish.

Place half of torn bread pieces in bottom of pan. Cover with cooked vegetables, turkey bacon and 1 cup of cheese. Cover with remaining bread pieces and top with remaining cheese.

In separate bowl, mix eggs, milk, salt, pepper and poultry seasoning. Pour over the entire pan. Press down on bread to ensure that all pieces are moist. Refrigerate overnight.

In the morning:

Preheat oven to 350 F. Bake uncovered, for 35-40 minutes, until puffed, bubbling and browned. Serve immediately.

Note: If you have leftover dressing, gravy and cranberry sauce, serve on the side.
