I made these based on the Macro eating thing I've been looking into.
I beat 3 eggs with 1/3 c cottage cheese, added seasonings, then baked them at 350 in a square buttered pyrex dish, for 20 minutes.
Cut into quarters, place on seeded thin bagel.
I sprinkled some cheese blend on, then topped each with slices of crisped turkey bacon.
These can be reheated in the oven wrapped in foil.
