I saw a thread about Mexican pizza with a suggestion about using tortillas instead of pizza dough, that reminded me of this recipe.
I got the tortilla pizza idea from a loved one.
Melt a little butter in a cast-iron frying pan, put in a tortilla, fry it until just starting to brown, then flip it. Quickly top it with shredded mozzarella, pepperoni slices, and halved cherry tomatoes (this gives you the flavor of the sauce without the sogginess).
Pop into the oven or under the broiler just till the cheese melts and browns. Cut into quarters.
A great low-carb crispy pizza snack!
You can adjust toppings, just beware of SOG!
