Todays Lunch

I made some soft corn tacos that I crisper up in a hot skillet with melted sharp white cheddar, rotisserie chicken, red cabbage, carrot, sour cream, fresh tomato salsa, and Chipotle Tabasco. Yummy!

I rarely eat bread, except for toast at breakfast sometimes. I usually avoid sandwiches - too much bread. But we stopped at the grocery today and Judy picked up a fresh loaf of Cuban bread. So I made “almost Cuban” sandwiches for lunch. I didn’t have any roast pork, so I doubled up on the ham. Everything else was the same - Swiss, pickle, mustard. Into the panini press.

It was pretty good, even without the pork.

Frankly, I don't think the pork brings anything to the sandwich. But, then again, I just use my leftover oven-roasted pork. Now maybe if I marinated it in a mojo marinade and grilled it, different story. I'll have to try that!
