1 lb black eyed peas (dry)
2 c Italian salad dressing
2 c diced green pepper
1 1/2 c diced onion
1 c finely chopped green onion
1/2 c diced jalapeno pepper
1 (2 ox) jar diced pimento, drained
1 tbsp finely chopped garlic
salt to taste
Hot pepper to taste
Letttuce leaves
Soak peas overnight. Drain. Add water to cover. Boil until tender, about 40 minutes. Don't overcook. Drain. Blend in salad dressing. Cool,
Add rest of ingredients except lettuce. Mix well. To serve, line individual plates with lettuce and spoon pea mixture on top.
You can mash the peas before adding other ingredients and use as a dip with a little mayonnaise.
