Tailgating and Recipes!

I've been tailgating a couple of times...I'm not a big football fan but I love the idea of tailgating!
So, I'm here in New Orleans and plan to be open this Sunday for the Saint's home game. I'm going to make slow roasted brisket and potato pancakes poor boys as a special.

French bread, buttered and grilled
3 pounds of slow roasted brisket (use your recipe)
2 potato pancakes per poor boy (use your recipe)
Green leaf lettuce leaves
Ripe tomato slices (the redder, the better)
Roasted Garlic Mayo
Sauteed apple slices
Pickle spears
Jus from the brisket.

Assembly -
Toast or grill bread in whatever size you want the poor boy to be
Slather mayo on both sides
Lettuce leaves
Tomato slices
Add freshly sauteed potato pancakes
Top with sauteed apple slices
Top with Brisket, getting lots of jus with it
Top with Pickle

I like to 'have' the other folks food.. :yum::yum::yum: Then I make the rounds .I treat myself to all the food & let them cook then they can clean up too.
I used to go for the food not the game, half the time I had no clue who was even playing. I don't like sports at all. The food & drinks & fun :thumb:
