I was looking at another cooking forum today and noticed someone mention Peg Bracken, so I searched the recipes.

This meatloaf sounds wonderful.

INGREDIENTS​

UNITS: US

• 2 lbs ground beef
• 4 1⁄2 ounces swiss cheese
• 2 eggs, beaten
• 1 large onion, chopped
• 1 large green pepper, chopped
• 1 teaspoon salt
• 1⁄4 teaspoon pepper
• 1 teaspoon celery salt
• 1⁄2 teaspoon paprika
• 2 cups milk
• 1 cup dry breadcrumbs

DIRECTIONS​

• MIx ingredients together in the order they're given. Press into a greased loaf pan. Bake uncovered at 350 F for 1-1 1/2 hours

I love her book. SHe wrote a sequel - The I Still Hate to Cook Book. I have them both, and still make a few things from them.
