I'm always looking for ways to use my prolific mint, and this recipe sounded good.

Recipe makes about 6 drinks in rocks glasses.

Sweet Tea Mint Juleps
½ cup sugar
½ cup water
4 Earl Grey tea bags
1 cup fresh mint
1 ¼ cup bourbon (I used Jim Beam)
1/3 cup fresh lime juice
1 ¾ champagne or sparkling wine (I used Great Western)
Combine sugar and water in bowl and microwave on high for 3 minutes.
Add tea bags and mint to the sugar water and steep for 20 minutes. Squeeze out tea bags and mint; discard. Chill the liquid.
Pour tea mixture into a pitcher and add champagne. Serve over ice cubes in chilled glasses and garnish with mint.
