SWAMP MULL
This time, it was........
1 qt. chicken broth,
3 cups Beef Broth,
2 cups water,
about 4 cups fresh baby spinach leaves,
1 1/2 cups corn,
2 carrots
peeled and sliced thin,
2 cups (uncooked) elbow macaroni, cooked and
drained,
6 hard-boiled eggs, sliced.
tarragon, salt, pepper, and Sriracha, all to taste
Cook off the Macaroni; drain and set aside.
Put the liquids in a soup pot; add carrots and cook till crisp/render. Add Spinach, boil for just a few minutes.
Use an immersion blender to create the "Swamp water" out of this. add remaining ingredients except for the elbows, and simmer for 20 minutes.
Add elbows.
Sprinkle individual servings with grated Parmesan .
