Strawberries and Jello Cake

This is one of two really pretty cakes I made for a wedding shower tonight and thought I'd share before I take them on over:

1 cup miniature marshmallows
2 cups frozen sliced strawberries in syrup, completely thawed
1 (3 oz.) pkg. strawberry Jello
2 1/4 cups all-purpose flour
1 1/2 cups of sugar
1/2 cup shortening (Crisco)
3 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 tsp. vanilla
3 eggs


Preheat oven to 350 degrees. Sprinkle the marshmallows evenly over the bottom of a greased 9 X 13 inch baking pan. In a small bowl combine the strawberries and Jello. Stir until Jello is completely dissolved. In a large bowl beat the flour, sugar, shortening, baking powder, salt, milk, vanilla and eggs. Pour this batter over the marshmallows. Spoon the strawberry-Jello mixture evenly over the batter. Bake for 45 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Top with whipped cream or frizeb whipped topping and place whole fresh strawberries for garnish. This is so moist, pretty and delicious! Enjoy.
