My neighbor gave me the fat end of a HUGE butternut squash. Dad wanted mashed and I wanted stuffed. So I cut the ball in half, made mashed in browned butter for Dad and stuffed my half with feta cheese, toasted pine nuts and fresh basil. FANTASTIC!
I only ate half of mine. I will definitely try this with my favorite - acorn squash!

Squash Stuffed with Feta and Pine Nuts
Sprinkle cavity of squash with salt, pepper and Italian seasoning. Bake for about an hour at 350, until tender. Fill cavity with crumbled feta and toasted pine nuts, then bake another 30 minutes. Finish with chiffonade of fresh basil.
