Ingredients

  • 1 pre-made pie crust
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3–4 minutes until the onion is translucent.
  3. In a large bowl, combine ricotta cheese, chopped spinach, eggs, milk, Parmesan cheese, salt, pepper, and nutmeg. Mix until well blended.
  4. Stir the sautéed onion and garlic into the ricotta mixture.
  5. Place the pre-made pie crust into a 9-inch pie dish. Pour the spinach and ricotta filling into the crust, spreading it evenly.
  6. Bake in the preheated oven for 30–35 minutes or until the quiche is set and the top is lightly golden.
  7. Allow to cool for a few minutes before slicing and serving.
