Spicy Lasagna Soup

Ni pedo
- 1lb ground spicy Italian sausage (or regular sausage and 2 tsp Italian seasoning and 2tsp red pepper flakes)
- 2 cups onion, chopped
- 1 cup carrot, diced
- 2 cups button mushrooms, sliced
- 2 T garlic, crushed
- 8 cups chicken broth
- 1 can chopped italian style stewed tomatoes (14 1/2 oz)
- 2 cups mafalda pasta (mini lasagna noodles) you can also substitute campenelle; it's easier to find.
- 2 cups fresh spinach, chopped
- 1 ball of fresh mozzarella, sliced or cubed
Optional for garnish:
- Sliced basil
- Shredded parmesan


BROWN sausage in a large saucepan over medium-high heat. Add onion and carrot, saute 3 minutes. Stir in mushroom and garlic, saute another 3 minutes.

ADD broth and tomatoes; bring to a boil. Stir in pasta and simmer until cooked, about 10 minutes. Add the spinach and cook about 1 minute until wilted.

GARNISH with cheeses and basil.
