Spaghetti with Broccoli
1 head broccoli
4 sm. ripe tomatoes
1/2 lb. spaghetti
2 tbsp. olive oil
1 tbsp. minced garlic
Fresh ground pepper to taste
1/4 tsp. hot pepper flakes
1/2 c. heavy cream
1/2 c. minced fresh basil
1 tbsp. butter or margarine
1/3 c. grated Parmesan
Discard tough stems of broccoli. Cut tops into 1-inch pieces, leave small stems intact (about 4 cups). Core and cut tomatoes into 1/4 inch cubes (about 1 1/2 cups).
Microwave broccoli 1 minute or cook 2 minutes in boiling water.
Cook spaghetti according to pkg. directions;
Meanwhile, heat oil in a Dutch Oven and add garlic; cook until wilted. Add tomatoes and stir about 1 minute. Add broccoli, salt and pepper. Drain spaghetti and add to broccoli mix.
Add pepper flakes, cream, basil and butter. Toss while bringing mixture barely to a boil. Remove from heat and sprinkle with cheese. Toss briefly and serve.
