12 egg whites
1/2 tsp salt
3 c plus 3 tbsp sifted powdered sugar
12 egg yolks
3 c pecans, finely chopped or ground
Beat egg whites and salt until foamy. Gradually add sugar and continue beating until stiff but not dry.
Beat egg yolks until very thick and lemon colored. Fold yolks very carefully into whites, then gently fold in chopped pecans.
Pour into ungreased 10" tube pan. Bake at 350F for 50 minutes.
Remove from oven and invert pan. Cool cake completely before removing from pan.
