Smoked turkey, wild rice, vegetable soup

As requested, sorry it took so long, I've been under the weather.

I've been thinking about using barley instead of the wild rice as well, just haven't tried it yet.


2 teaspoons butter
1 cup chopped carrot
1 cup chopped onion
1 cup chopped green onions
1 teaspoon chopped fresh rosemary
2 teaspoons fresh thyme
1/4 teaspoon black pepper
3 garlic cloves, minced
5-6 cups unsalted chicken broth
1-1/2 cups chopped smoked turkey
1 cup uncooked wild rice
2 tablespoons dry sherry

salt and pepper to taste

Over medium heat, melt 2 tsp butter, then saute carrots, onion, green onions, garlic, rosemary and thyme until just starting to brown. Stir in 5 cups broth and loosen any fond that may have formed. Add turkey and wild rice. Bring to a boil, cover, reduce heat and simmer for 45 minutes or until rice is done. Add sherry, stir to mix well. Taste and adjust seasonings. Add the last cup of broth if necessary. Mix then serve.
